At Gascoland, cooks from very different cultural backgrounds show traditional techniques of baking bread on biogas produced on location from surplus bread. The BreadDigester kitchen offer delicious preserved foods to accompany the biogas bread.

Mariana is a spatial designer working in de Kolenkitbuurt, apart from a passion for city making she has a passion for Mexican food. That is why she is constantly cooking with the recipes from both her grandmothers and special ingredients smuggled to The Netherlands in her luggage. It makes her happy to share these precious recipes, yet they are not an exact science: the most perfect mexican dishes are only a matter of intuition.
